Projet de recherche sur la contamination du sirop d’érable en vrac

La contamination microbienne du sirop d’érable en grand contenant est un enjeu de qualité qui retient beaucoup d’attention dans l’industrie acéricole. Le projet fait appel à l’expertise de plusieurs partenaires qui sont responsables de différents moyens proposés pour atteindre l’objectif principal du projet qui est de déterminer et d’évaluer le risque associé au sirop d’érable qui est contaminé ou qui aurait été contaminé par des micro-organismes. Pour sa part, la principale tâche du stagiaire postdoctoral consistera à faire un recensement des micro-organismes pouvant être retrouvés dans le sirop d’érable par des méthodes moléculaires et de culture, et à déterminer, le cas échéant, leur capacité à survivre et se développer dans ce milieu. Spécifiquement, la personne sera amenée à optimiser et réaliser les expériences associées aux objectifs suivants : 1) Quantifier la contamination microbienne des différentes catégories de sirop d’érable par une approche moléculaire 2) Faire un recensement des microorganismes pouvant être retrouvés dans le sirop d’érable par une approche métataxonomique 3) Évaluer la capacité des principaux contaminants à survivre et se développer dans ce milieu par une approche cultureomique (Isolement et caractérisa*on des principaux contaminants). De plus, le ou la stagiaire postdoctoral.e travaillera en étroite collaboration avec les partenaires et sera impliqué dans l’intégration et l’analyse des résultats du projets dans son ensemble, ainsi que dans la dissémina*on des résultats sous forme de rapports, articles scientifiques et communications.

The pivotal responsibility of the postdoctoral fellow revolves around pinpointing the spectrum of microorganisms present in maple syrup. This task encompasses the utilization of molecular and cultural methodologies to ascertain their viability and proliferation in this environment. To achieve this, the candidate will refine and execute a series of experiments aligned with the subsequent objectives: 1. Precisely quantify the extent of microbial contamina-on across various categories of maple syrup using advanced molecular techniques. 2. Undertake a comprehensive survey of the diverse microorganisms inhabiting maple syrup through a metataxonomic approach. 3. Assess the survival and growth capabilities of primary contaminants within this matrix, employing a cultureomic strategy that involves the isola-on and characterization of predominant contaminants. Furthermore, the postdoctoral fellow will maintain a close collaborative relationship with the project partners. Their involvement will extend to the amalgamation and analysis of collective project outcomes, along with the communication of findings via reports, scholarly articles, and various forms of scientific discourse.
