Burkholderia gladioli pathovar cocovenans et l’acide bongkrek : pathogène émergent en sécurité des aliments?
Burkholderia gladioli pathovar cocovenans et sa toxine létale, l’acide bongkrek, sont à l’origine de plusieurs épisodes de cas groupés de maladies toxiniques à transmission alimentaire. Il s’agit de maladies graves avec un taux de mortalité très élevés (de 20 à 100%) nécessitant l’ingestion de doses faibles d’acide bongkrek, produit par B. gladioli pathovar cocovenans à l’intérieur de matrices alimentaires telles les pulpes de soja ou de coco, des farines de maïs, des nouilles de riz. Ces 15 dernières années les épidémies ont été décrites en Chine, en Indonésie, au Bhutan et au Mozambique au domicile (79%) ou au restaurant (21%), les cas sporadiques ne sont pas pris en compte. La production artisanale (non hygiéniquement maitrisée) d’aliments fermentés à base de soja, coco, riz, maïs semble être le principal facteur de risque. L’ensemble des auteurs attire l’attention sur ce danger au regard du développement du commerce international et de la mode des « fabrications maison » de produits fermentés.
